70% Cabernet Franc - 20% Merlot - 10% Cabernet Sauvignon
This Cabernet Franc based Bordeaux blend, is assisted by hint of Merlot with its velvety tannins and supported by the freshness of the Cabernet Sauvignon . The combination of these varietals, coming from very different terroirs, represents a slightly different version of wine coming from coastal Tuscany without losing its identity of provenance.
The 2017 vintage was very much influenced by a drought in spring that led to a fewer number of grapes produced per plant. Given this situation we payed special attention to the date of harvest, in order to maintain the distinctive freshness that we seek for our wines.
Because of the early harvest we opted for a very soft extraction with very little pumping over and few "pigeages".
After the sorting of the grapes, the full berries are put by gravity in to small stainless steel vats. The grapes undergo a brief cold-soak before the fermentation starts naturally, followed by the malolactic. Once both fermentations are done the wine is gently moved in to second and third year French barrels for approximately 8 months. During this time with move the lees to give richness to the wines by doing some “battonage”.
