Cabernet Franc 65% - Merlot 35%
Round and ripe with lovely varietal notes typical to cabernet Franc, mixed with the velvety fruits of the Merlot.
Aged in 30% new French Barrels of 225L, the rest in 3 and 4 years old 110L barrels.
Cabernet franc : Vineyard planted in the early years 2000 on a medium density/sandy soil type exposed north/North-West.
Merlots : Vineyard planted at the end of the 1990’s on a rich in clay type of soil, exposed west.
I remember 2012 as a very warm vintage that benefited colder terroir or earlier picking.
The grapes were well selected then put in small vats for a short cold soak ( dry ice) before undergoing the alcoholic fermentation. After the fermentation the wine was put in French barrels of different type and age for 18 Months.
