70% Cabernet Franc - 20% Merlot - 10% Cabernet Sauvignon
This Cabernet Franc based Bordeaux blend, is assisted by hint of Merlot with its velvety tannins and supported by the freshness of the Cabernet Sauvignon . The combination of these varietals, coming from very different terroirs, represents a slightly different version of wine coming from coastal Tuscany without losing its identity of provenance.
Under many aspects 2016 can be considered an easy vintage with dry sunny days and cool nights. Two fondammental elements that allow the grapes to ripe gently, maintaining their frutiness and freshness for the style of wine we like to produce.
After the sorting of the grapes, the full berries are put by gravity in to small stainless steel vats. The grapes undergo a brief cold-soak before the fermentation starts naturally, followed by the malolactic. Once both fermentations are done the wine is gently moved in to second and third year French barrels for approximately 8 months. During this time with move the lees to give richness to the wines by doing some “battonage”.
